The giant TV screen on the east wall of the room showed G20 leaders, including United States President Joe Biden, French President Emmanuel Macron and Dutch Prime Minister Mark Rutte, together with Indonesian President Joko “Jokowi” Widodo planting mangrove trees in the Ngurah Rai Grand Forest Park.

However, that was not what sparked the applause. Amid rivalry among G20 member countries, since the beginning of this year, the G20 forum has seemed to be covered in "fire". The atmosphere carried over to the conference table as well. Efforts to reach an agreement to produce a joint declaration were colored by intense debate. The triggering issue -- as is known -- was the war in Ukraine.
However, on Wednesday (16/11/2022), at the Ngurah Rai Tahura Gand Forest Park, the leaders looked cheerful. Everyone was smiling and laughing. "The way your leader manages differences is quite impressive," said a fellow journalist from Japan.
President Jokowi in the VVIP "fieldwork tour" in Tahura showed his "ordinary" figure. He even looked like a tour guide, showing and explaining the mangrove-nursery process. The clothes worn by world leaders were casual, with white-collar shirts and dark trousers. The event was also held without any additions except for a walk and hanging out together in the pavilion.
It seems that this atmosphere had indeed been established since the night before, when President Jokowi and First Lady Iriana Widodo held a banquet for the leaders of the world’s 20-largest economies.
The variety of food served had local nuances. In the dinner which was held in the Garuda Wisnu Kencana area on Tuesday night, the dishes served came from a number of regions in Indonesia, from Bali, Java, Sulawesi, Lampung, and West Sumatra to Special Region of Aceh, giving meaning to unity in differences.
”Please enjoy the dishes we have prepared for you. I hope it's not too spicy for Your Majesty," said the President while inviting the guests to eat the dish.
For the appetizer, the guests were served food with the theme "Aneka Ratna Mutumanikam", which means unity in differences. The food included mangoes, seaweed, fruit salad with spices à la Bali, known as Balinese rujak and perkedel jagung daging rajungan, or Manado corn cakes mixed with crab meat.
Culinary expert William Wongso was behind the success of the gala dinner for the G20 heads of state. He was the person in charge of designing, preparing and serving the three-course menu at the banquet.
Each dish was presented in two categories, namely vegetarian and non-vegetarian. “However, for this time, because the duration is 45 minutes, we can serve only three kinds of dish, namely appetizer, main course and dessert. For raw materials, we use various elements from several regions of the archipelago, which are served together on one plate," said William.
For the non-vegetarian menu, William served a menu of Lampung Wagyu beef steak. The tender and juicy steak was served with rendang sauce. The steak was accompanied by steamed cod fish. For the vegetarian version, William replaced the Wagyu meat with young-jackfruit flesh, which was also drizzled with rendangsauce. The accompaniment was sliced tempeh made from quinoa.
Both versions are equipped with a choice of carb dishes made from cassava and potatoes, which are processed into mousselines or similar to mashed potatoes. According to William, the diversification of food ingredients was President Jokowi's idea.
